■Choose Salmon Based on the "Shape of the Stain"

Salmon has been the number one most popular sushi topping at conveyor belt sushi restaurants for 15 consecutive years.

But when you see salmon fillets with "V-shaped" or "straight" stencils at the store, which should you buy?

Here's what the pros recommend…

"The fatty belly side has diagonal (straight) stencils. For sashimi, choose the one with evenly spaced diagonal stencils that are rich in fat."

The pros recommend the "straight" stencil.

So what about the "V-shaped" stencils…?

"The V-shaped side is the back. The back side is a little lighter, so it's delicious butter-grilled or fried."

It's recommended to use either the "belly" or "back" part of the salmon depending on your preference.
