Here are four rules to follow if you want to recognize a real artisanal sausage from a manufacturer:
Shape: it must be crooked
Flower: it must be natural (must not remain on your hands)
Firmness: the sausage must not be "soft"
Closure: choose sausages with a good density; this is a sign of maturation
