Elderflower is in full season and it's time to make some champagne
o. l use one 2L bottle of water but take a bit of the water off to make space for our ingredients. Add 5tbs of sugar, 3 big elderflowers and make sure they are fully opened and full of pollen because it will help with the fermentation, than juice of one lemon and one lemon cut into small pieces. Shake and partially cover leave the bottle in a sunny spot for 2 - 3 days until fermented. Drain and refrigerate.
