Jowar idli Ingredients:
1 cup jowar
1/3 cup urad dal
1 tbsp methi seeds
1 - 1 1/2 cups water or as needed to make thick batter
1 tsp salt
1 tsp powder sugar to make dosa
No coconut chutney
2 tsp oil
3-4 garlic cloves
1 medium size sliced onion
1 green chili
8-10 curry leaves
1/8 cup roasted peanuts
1/8 cup roasted chana or dalia
Handful of coriander leaves
Salt as per taste
1 cup water
For tadka
2 tsp oil
1 tsp mustard seeds
1 tsp urad dal
5-6 curry leaves
1 dry red chili

Poha Suji bites:
Flattened Rice/Poha (पोहा) - 1 Cup
Semolina (सूजी) - 1/3 Cup
Curd (दही) -1/2 Cup
Salt (नमक) - As Per Taste
Black pepper powder (काली मिर्च) - 1 tsp
Coriander Leaves (धनिया पत्ती)
Soaked moong dal (मूंग दाल) - 1/2 cup
For Tadka :
Oil( तेल) - 1 Tsp
Cumin Seeds (जीरा) - 1/4 Tsp
Mustard Seeds (सरसों के दाने) - 1/4 Tsp
Asafoetida (हींग) - 1/4 Tsp
Sesame (तिल) - 1 Tsp
Dry Red chili - 2 nos.
Slit Green Chili (हरी मिर्च) - 1-2 Slit
Curry Leaf (करी पत्ता) - 8-10
Salt (नमक) - As Per Taste
Podi Masala (पोड़ी मसाला) - 2 tsp
Coriander Leaves (धनिया पत्ती) - For Garnishing

Handvo Ingredients:
Soaking & grinding
Rice | चावल 1 cup
Chana dal | चना दाल 1/3 cup
Tur dal | तुअर दाल 2 tbsp
Urad dal | उरद दल 2 tbsp
Moong dal | मूंग दाल 2 tbsp
Water to wash and soak rice and dal
Green chilli | हरी मिर्च 1 no.
Ginger | अदरक 1 inch
Curd | दही 1/4 cup (sour)
Water | पानी 1/4 cup
Batter
Bottle gourd | लौकी 1/2 no.
Carrot | गाजर 1 no.
Pumpkin | कद्दू small piece
Boiled sweet corn | उबला हुआ मीठा मक्का 1/4 cup
Asafoetida | हींग a pinch
Turmeric powder | हल्दी पाउडर 1/4 tsp
Red chili powder | लाल मिर्च पाउडर 1/4 tsp
Salt | नमक to taste
Fresh coriander | हरा धनिया a handful (roughly chopped)
Lemon juice | नींबू का रस 1 tbsp
Water | paani 1/4 cup or as required
Baking soda | मीठा सोडा 1/4 tsp
Tempering & final cooking
Oil | तेल 2-3 tbsp
Mustard seeds | राई 1 tsp
White sesame seeds | सफेद तिल 1 tsp
Curry leaves | कड़ी पत्ता 8-10 nos

Moong Dal uthappam Ingredients:
For batter
1 cup whole moong dal
1/2 cup urad dal
1/2 tap fenugreek seeds
Water to soak dal
Chilled water or ice cubes to blend the dal
Cucumber chutney
1/4 cupc fresh coconut
1/2 cup chopped cucumber
1 green chili
Small piece of ginger
1 tbsp roasted chana dal or dalia
1 tbsp roasted peanuts
Salt as per taste
1 tsp lemon juice
2-3 tbsp water
Few ice cubes
For tadka (oil, mustard seeds, urad dal, dry red chili, few curry leaves, pinch of Asafoetida)

For dough
1 cup wheat flour
1/2 cup jowar flour
1/2 tsp salt
1/2 tsp Ajwain
Pinch of turmeric
1 tsp ghee
Water to knead dough
For stuffing
1 cup boiled chickpeas
1/4 cup chopped onion
1/2 cup grated paneer
1 green chili
Fresh coriander
Salt as per taste
1/2 tsp cumin powder
1/2 tsp fennel powder
1 tsp chaat masala

Spinach wrap ingredients
Handful of spinach leaves
1 inch ginger
1 green chili
1/2 cup gram flour
30 gms cottage cheese
Salt as per taste
1/4 cup whey water/normal water
